Polynesian Chicken

You will need:

1 lb. skinless boneless chicken breasts or thighs

2 T olive oil

1 med. green pepper, cut into 1 in. pieces (optional)

1 (15 oz.) can pineapple chunks, 1/4 cup liquid reserved

1/4 to 1/2 cup of Country Gourmet Apricot Ginger Teriyaki Sauce

Hot buttered rice

Cut chicken into 2 inch strips. In large skillet, pour olive oil, then saute chicken and green peppers until chicken changes is done. Stir in Country Gourmet Apricot Ginger Teriyaki Sauce and pineapple chunks with 1/4 cup of the reserved pineapple liquid. Cover and simmer 10-12 minutes or until chicken is sauce is thickened.

Serve over rice.
