Scrumptious Irish Soda Bread 
 
Perfect for Saint Patricks Day Celebrations! 
 
 
Country Gourmet's Scrumptious Soda Bread  
1/3 cup white sugar  
1 egg, lightly beaten  
1 cups buttermilk  
1/4 cup oil  
1/2 cup raisins (to soften raisins, boil in 1 cup water and 
then drain.)  
2 Tablespoons butter, melted  
 
Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 
inch loaf pan or cookie sheet  
In large bowl stir together scrumptious soda bread mix and 
sugar, then add beaten egg, buttermilk and oil. Mix just 
until moistened. Pour into prepared loaf pan or with 
floured hands shape into a round loaf and place on cookie 
sheet. Drizzle melted butter over loaf and if desired 
using a knife cut a cross into top.  
Bake for 45 to 50 minutes, or until a toothpick inserted in 
the bread comes out clean. Cool on a wire rack. Wrap in 
foil for several hours, or overnight, for best flavor.
